Okay, so as you all know I was never a big fan of tofu, but I found out a new brand that is simply amazing and delicious! I don’t know if it exists outside of Portugal, it’s called Shambhala, and I absolutely love it!
Keep in mind that I was cooking for two :)
What you will need:
Some carrots, mushrooms, the awesome tofu, spaghetti, tomato pulp, white wine. Not in the picture: olive oil, salt, one glove of garlic and an onion.
Next, we shred the carrots (I used two).
We wash the mushrooms, then dice them, We add them to the carrots, in the wok.
Add in the garlic and onions, with a very small amount of olive oil, and begin cooking!
We wait until our mix is “mellow” before we add the tofu.
As you can see, this tofu has an amazing texture, it’s very similar to scrambled eggs! We mix it with the rest of the ingredients.
Add the tomato pulp, a little white wine, and some salt. Mix it all.
Wait for it to cook, and try to resist the amazing smell!
You can start to cook the spaghetti any time you want, I chose to do it after the tofu was nearly finished :)
And that it is! It was unbelievable! Seriously, try this recipe, I’m so glad I did. An all-time favorite, for sure :)
